citric acidOrganic acid widely distributed in the plant kingdom; it is found in high concentrations in citrus fruits and has a sharp, sour taste. At one time it was commercially prepared from concentrated lemon juice, but now the main source is the fermentation of sugar with certain moulds. In biochemistry, citric acic plays a key role in metabolism, as the defining compound of the Krebs cycle, also known as the citric acid cycle or tricarboxylic acid cycle.
