Bourbon distillery, Kentucky. ‘Bourbon’ whisky is strictly only that which is made in Bourbon County, Kentucky. Although that rule is no longer adhered to, the state of Kentucky does produce a large amount of the world's bourbon, and there are official standards which ensure that all bourbons have no less than 51% maize spirit and are matured in newly charred oak casks, such as these, for at least four years.

County in north-central Kentucky; area 756 sq km/292 sq mi; population (1990) 19,200. Its capital is Paris. It produces burley tobacco, livestock, and poultry, makes dairy products, and quarries limestone. There is some manufacturing in Paris. The first still making the whiskey named after the county was built by the Baptist minister Elijah Craig in Georgetown, in 1789.

The county is drained by the South Fork of the Licking River, in the bluegrass region.
