carotene

Naturally occurring pigment of the carotenoid group. Carotenes produce the orange, yellow, and red colours of carrots, tomatoes, oranges, and crustaceans.

These recommendations, known as suggested dietary targets (SDTs), were made for vitamin A, carotenes, vitamin C, vitamin E, folate, sodium and potassium, dietary fibre and long-chain n-3 fats and are based on the evidence primarily surrounding prevention of cardiovascular disease and cancer.
The pate centres of factory-produced eggs are made bright orange (to indicate high levels of nutritious carotenes that aren't actually present) by feeding hens marigold flowers, which dye the yokes.
Scientists have discovered that the precursors to vitamin A--the carotenes found in plant foods--cannot be converted to true vitamin A by infants and children.
