Celaya| City on the River Laja, in the state of Guanajuato, Mexico; population (1995) 315,600. It lies 46 km/29 mi west of Querétaro, at a height of 1,780 m/5,840 ft. The city is an important road and rail junction. It is the centre of a rich agricultural region, and its industries include textiles, flour milling, and tanning. The city also has distilleries. |
| Celaya has several baroque churches designed by the architect Francisco de Tresguerras (1765–1833), who was born here. Celaya is known locally for its confectionery, particularly a caramel spread called cajeta. |
