thaumatin

Naturally occurring, non-carbohydrate sweetener derived from the bacterium Thaumatococcus danielli. Its sweetness is not sensed as quickly as that of other sweeteners, and it is not as widely used in the food industry. It is one of a small group of proteins that stimulate the receptors for sweet taste by mechanisms yet to be discovered. Other examples include monellin and brazzein.
