Gruyère

District in Fribourg canton, west Switzerland, 25 km/15 mi southwest of Fribourg; area 497 sq km/192 sq mi, population (1995 est) 15,400. It is renowned for its pale yellow cheese with large holes, although this product is now mostly made in Emmental. Gruyère centres on the Saane Valley. Bulle is the present-day capital, Gruyères the historic capital. In addition to cheese production, chocolate is manufactured and cattle are raised.
