Harvey, Frederick Henry (1835–1901)

English-born US restaurateur. In 1876 he opened his first railroad depot restaurant in Topeka, Kansas, and a chain of restaurants, hotels, and dining cars associated with the new Atchison, Topeka, and Santa Fe Railroad soon followed. Harvey's restaurants were famous for fresh linens, fine food, and highly trained waitresses known as ‘Harvey Girls’. Harvey was born in London, England, and emigrated to the USA c. 1850.
