Labuza, Theodore P (1940– )

US food scientist. He taught food engineering at the Massachusetts Institute of Technology (1965–71), his alma mater, before going to the Food Science and Nutrition Department at the University of Minnesota (from 1971). He wrote 12 textbooks, hundreds of articles, and edited the Journal of Food Processing and Preservation (1976–84). During Operation Desert Storm against Iraqi troops occupying Kuwait in 1991, he worked for the Department of Defence task force on food quality problems associated with a hot environment. Labuza was born in New York City.
