The French, who traditionally have been fonder of sorrel than we are, have a whole raft of recipes with sorrel as their backbone - potage Germiny, saumon à l'oseille, oseille au jus, anguilles au vert, to name just a few.
Two of his inaugural recipes are based on fish: La Tarte au Saumon, Oseille et Basilic, et Sa Sauce Homardine (salmon tart with sorrel and basil in lobster sauce), and Le Pithiviers de Saumon et Saint-Jacques et Sa Sauce Homardine (salmon and scallops in lobster sauce).
