hydrogenation

Addition of hydrogen to an unsaturated organic molecule (one that contains double bonds or triple bonds). It is widely used in the manufacture of margarine and low-fat spreads by the addition of hydrogen to vegetable oils.

Vegetable oils contain double carbon-to-carbon bonds and are therefore examples of unsaturated compounds. When hydrogen is added to these double bonds, the oils become saturated and more solid in consistency.

Researchers at the Central Food Technological Research Institute have shown that a blend of fractionated coconut oil and palm oil has the potential to replace partially hydrogenated vegetable oil in baked goods.
Food that contains trans-fats includes some margarines, cookies, crackers, and other commercial baked goods made with partially hydrogenated vegetable oils, as well as French fries, donuts, and other commercial fried foods.
Finally, be sure to read labels and avoid foods that contain artificial sweeteners, chemical preservatives, and partially hydrogenated vegetable oil.
