Soest

City in North Rhine-Westphalia, Germany, 50 km/31 mi east of Dortmund; population (1994) 294,800. Soest was an important member of the Hanseatic League medieval trade federation. Sugar refining is the principal industry. The town has several medieval churches, and is a tourist centre.
