Cashew nut tree, Dominica. The plant can grow up to 12 m/40 ft in height. It is used principally for its kidney-shaped nuts, but also for its wood and for an oil produced between the two shells of the nut.

Cashew nuts. The nuts are eaten either roasted or fresh. The oil of the cashew – found between the inner and outer shells of the nut – has medicinal uses, such as treating corns, warts, and cancerous ulcers, although it should be used with caution as it has toxic properties.

Preparation of cashew nuts in Dominica. This method of roasting the nuts on burning logs can be harmful to the eyes and skin when the outer shell of the nut breaks open and releases the oil. Improved methods of roasting involve the use of roasting cylinders, which dispel the poisonous properties of the oil.

Tropical American tree. Widely cultivated in India and Africa, it produces poisonous kidney-shaped nuts that become edible after being roasted. (Anacardium occidentale, family Anacardiaceae.)
