Warm-water, marine fish. It is silver and grows up to 90 cm/35 in. Pompanos are a valuable edible fish.

Classification

Pompanos are in the genus Trachinotus, in order Perciformes of class Osteichthyes.

In January 2004, 2 fishermen captured a 26-kg amberjack (local name: Medregal Negro; scientific name: Seriola Rivoliana) while scuba diving along the coast of the Canary Islands, Spain.
The company offers a few different packages of sushi with combinations of the conventional varieties--salmon, tuna, salmon roe, bonito, sea urchin, shrimp, squid, scallop, amberjack, et cetera--as well as different vegetable roll options like pumpkin and kidney bean tempura.
Near the reef, large iguanas ate from our hands, and the snorkeling was the best yet, as massive amberjacks, groupers and stingrays circled just a few feet offshore near a floating bridge that led to Mayan caves.
