benzoic acid

White crystalline solid, sparingly soluble in water, that is used as a preservative for certain foods and as an antiseptic. It is obtained chemically by the direct oxidation of benzaldehyde and occurs in certain natural resins, some essential oils, and as hippuric acid.

Glyceryl tribenzoate and pentaerythrityl tetrabenzoate, and neopentyl glycol dibenzoate are typical of the benzoic acid esters.
For example, in snapdragons, one particular methyltransferase enzyme adds a methyl group (a central carbon hub bonded to three hydrogen atoms) to benzoic acid, producing methyl benzoate.
