dairying

The business of producing milk and milk products.

In the UK and the USA, over 70% of the milk produced is consumed in its liquid form, whereas areas such as the French Alps and New Zealand rely on easily transportable milk products such as butter, cheese, and condensed and dried milk.

It is now usual for dairy farms to concentrate on the production of milk and for factories to take over the handling, processing, and distribution of milk as well as the manufacture of dairy products.
