endive

Cultivated annual plant, the leaves of which are used in salads and cooking. One variety has narrow, curled leaves; another has wide, smooth leaves. It is related to chicory. (Cichorium endivia, family Compositae.)

1/2 teaspoon butter 1/2 small onion, finely chopped 1 clove garlic, finely chopped 1/2 small Idaho potato, peeled and finely chopped 2 cups clear vegetable stock 1/2 head Romaine lettuce or escarole, coarsely chopped 2 tablespoons extra virgin olive oil 1/2 teaspoon lemon juice Salt and pepper to taste
Commonly available ones are romaine, red- and green-leaf lettuce, radicchio, escarole, cabbage of various kinds, curly endive, spinach, and iceberg lettuce.
Later I added radicchio, escarole, and endive to my repertoire.
