fennelAny of several varieties of a perennial plant with feathery green leaves, belonging to the carrot family. Fennels have an aniseed (liquorice) flavour, and the leaves and seeds are used in seasoning. The thickened leafstalks of sweet fennel (F. vulgare dulce) are eaten as a vegetable.
