lactoseWhite sugar, found in solution in milk; it forms 5% of cow's milk. It is commercially prepared from the whey obtained in cheese-making. Given this shift, it’s no coincidence that whey and lactose prices are at record highs and non-fat dry milk prices are nearly 20cents above the support price. Further, by breaking down lactose in advance, the new product works to reduce the likelihood of an upset stomach. If you are lactose intolerant, you will produce gas by eating dairy products, as the undigested lactose makes its way to the gas-producing bacteria in the lower GI. |
