lactoseWhite sugar, found in solution in milk; it forms 5% of cow's milk. It is commercially prepared from the whey obtained in cheese-making. Like table sugar (sucrose), it is a disaccharide, consisting of two basic sugar units (monosaccharides), in this case, glucose and galactose. Unlike sucrose, it is tasteless.
