amygdalin

Glucoside found in bitter almonds, cherry kernels, and other vegetable products.

When amygdalin is macerated and kept in contact with water, fermentation sets in, owing to the presence of emulsin, and the substance is decomposed into hydrocyanic acid (prussic acid), benzaldehyde, and glucose.
