laevulose

Ketose (simple sugar) contained in most sweet fruits, honey, and starches, together with dextrose.

Laevulose is purified by boiling inulin, a starch contained in dahlia tubers, with water; or by the breakdown of cane sugar into glucose and laevulose; or by reacting sucrose with sulphuric acid. It is less easily fermented than glucose, and is a powerful reducing agent. It is sweeter than cane sugar, is more easily absorbed, and can be used instead of cane sugar by people with diabetes.
