morel

Any of a group of edible mushrooms. The common morel (M. esculenta) grows in Europe and North America. The yellowish-brown cap is pitted with holes like a sponge and is about 2.5 cm/1 in long. It is used for seasoning gravies, soups, and sauces and is second only to the truffle as the world's most sought-after mushroom. (Genus Morchella, order Pezizales.)
