ptomaine

Any of a group of toxic chemical substances (alkaloids) produced as a result of decomposition by bacterial action on proteins.

Ptomaine is not the relevant factor in ‘food poisoning’, which is usually caused by bacteria of the genus Salmonella or Campylobacter.
