Wine that has extra alcohol added to raise its alcohol content to about 20%. Fortified wines keep well because the alcohol kills the micro-organisms that spoil natural wines. Port, which originates from Oporto in Portugal, is made by adding brandy to wine before fermentation is complete; sherry, originally made in Jerez in Spain, is a dry wine fortified after fermentation and later blended with sugar for sweet sherry; vermouth is flavoured with bitter herbs. Marsala, from Sicily, is fortified after fermentation and then heated gradually.
